New House, Just Got Cold, Fresh Frozen

 The weather is getting colder every day. I started to wear long sleeved clothes. I never thought that the winter could come this early. My grandmother came from Eskişehir the week the schools opened. I was happy since I have not seen my grandma as in face for 2 years. Having someone to open the door when you come home from school is a good thing. Even your meal is ready!

Not only me, grandma's coming makes neighbors' children happy too, I think. When they come from school, same as mine, she also gives them food sometimes (my favorite is gözleme). I still feel strange in this city since we moved recently. Since we were moving, we ate everything in the deep freezer before. Now it's high time we filled the deep freezer again. My mom cooks very well and is diligent but it is hard to do winter preparation only in person. So mom and grandma are making the preparation together. Let's look at what we do for winter.

Menemenlik

One of the most consumed dishes in Türkiye for breakfast, even at any time of the day, is menemen. It simply contains tomato, pepper and egg. Since it is difficult to find fresh tomatoes in winter, tomatoes and peppers are cut and boiled and put in jars beforehand. This is called menemenlik and can be used as a sauce in other dishes.

Turşu

Another winter recipe for those who like sour tastes is turşu (pickles). It is made in the fall because it takes a long time to make the pickle and it spoils in the heat. A large jar is filled with whatever will be marinated (my favorite is pickled gherkins), then vinegar or lemon water is poured into it and left in a cool, dry place until it ferments. Everything can be pickled, but cucumber, cabbage and hot pepper pickles are popular in Türkiye, sweet pickles are not made like in Germany.

Yufka

In ancient times, roads were closed when it snowed in Türkiye. People used to store oil, flour and bread in houses. Before winter came, yufka (phyllo) was made. Although this tradition is old, there are still people who do it. A dough is made with flour, water and salt and rolled in a round shape. Then it is cooked in the oven and stored. Since there is no yeast in the dough, it is flat bread, not fluffy.
